2 packet raspberry jelly
500ml (2 cups) boiling water
1 (20cm) store-bought Madeira loaf
250ml (1 cup) ALL GOLD SMOOTH APRICOT JAM
1 can (800g) KOO FRUIT COCKTAIL
500ml (2 cups) cooked custard
125ml ( ½ cup) thick cream
10 fluid ounces heavy cream
Make jelly by dissolving in boiling water, allow to cool and place in refrigerator until set.
Cut cake into thick slices. Sandwich the slices with jam and place them in the bottom of a large glass bowl.
Spread the fruit cocktail over the cake.
Spoon jelly over fruit.
Pour custard over jelly.
Top with whipped cream and decorate with chopped nuts.
Chill for at least 2 hours before serving.
