750g mince, seasoned, and added with diced onion, roll into round balls
1 cup spinach
1 can @koofoodsa chickpeas, drained
1 can @koofoodsa garden peas( drained)
4 chopped tomatoes
1/2 green pepper (diced)
1 cube beef stock
coriander, to garnish
Heat the oil in a deep pan, and brown meatballs, remove and set aside. Add the onion, garlic, and cook until soft and translucent. Add the spices and fry them until fragrant, about 1 minute.
Add the chopped tomatoes and diced green pepper then stir, then add the spinach and cook until wilted, about 1 minute.
Add the chickpeas, peas and stock, and season with salt then transferthe meatballs back into the pan. Cover and reduce the heat to medium-low and simmer for 15 minutes with the lid on.
Remove the lid and increase the heat slightly, then cook until the mixture is thick enough for your liking.
