KOO Fruit Salad Swiss Roll

For the swiss roll 

1. Mix sugar, eggs for 2  minutes on high speed and mix in water and vanilla essence
2. Fold all the dry ingredients into the egg mixture using a spatula
3. Put wax paper on a flat pan and pour in the mixture 
4. Tap the pan to release air bubbles. Bake at 180 degrees for 15 minutes or till golden brown (NB preheat oven 15 minutes in advance)
5. Once baked remove from the oven and put in on a damp tea towel face down, remove the paper and trim the sides 
6. Spread jam of your choice
7. Once cooled a bit roll the cake and cover with the towel
8. Let it stand for a few minutes and sprinkle with castor sugar or icing sugar and slice

For the custard

1. In a bowl mix 1/2 cup milk with custard powder and sugar to make a paste 
2. In a pot boil milk and once at boiling point pour the custard mixture and mix as fast as you can on low heat.
3. Once combined and thick switch off the stove and leave custard on the stove for 2 minutes and put it aside to cool off
4. In a deep bowl, layer swiss roll slices on sides and pour half of the custard and make another swiss roll layer in the middle
5. Pour KOO Fruit Salad more custard then add KOO Peach Slices and cherries and dust with icing sugar
