Classic Gammon with Pineapple Rings

Serves 6

To cook the gammon:

2kg Gammon

2 Bay leaves

5 Cloves

2 sticks Cinnamon

3 star anise

2 Onion, quartered

2 Carrots, chopped into chunks

2lt Coke

For the glaze and garnish:

¼ cup All Gold Apricot Jam

1-2 tins KOO Pineapple Rings

Glace Cherries

Toothpicks

Place all the ingredients into a pot, cover with extra water to cover the gammon if needed.
Cook for 30 minutes per ½ kg.
Once cooked, remove from the cooking liquid and allow to cool to room temperature.
To make the glaze reduce a few ladles of the cooking liquid until it forms a syrup.
Stir this with the apricot jam.
Preheat the oven to 180C.
Remove the skin and excess fat off the gammon and brush with the glaze.
Arrange the pineapple rings and the cherries using toothpicks to secure them for cooking.
Brush with more glaze.
Place in the oven and roast for 30 -45minutes or until the pineapple looks slightly browned and the gammon is nicely caramelised.
Brush with glaze while cooking to get the best colour.
Remove the toothpicks before presenting for slicing
