Butter beans in Brine

Classic Chocolate Chip Cookies

4 tbsp Butter

¾ cup Sugar

½ cup KOO Butter Beans, drained

2 Eggs

1 ½ tsp Vanilla Essence

1 ½ cups Golden Cloud Cake Flour

½ tsp Bicarbonate of Soda

½ tsp Salt

½-1 cup Chocolate Chips

Preheat the oven to 180C.
In a bowl place the butter and sugar and cream together using a hand beater.
Add the butter beans and continue to beat until the mixture is smooth.
Next add the eggs one at a time beating well between additions.
Next using a rubber spatula stir in the flour, bicarb and salt and finally the chocolate chips.
Place spoonfuls of the mixture on a greased and lined baking tray leaving about 5cm between the cookies.
Bake for 15-20 minutes or until golden brown.
Remove from the oven and leave to cool before serving.
