For the savoury granola: Preheat oven to 100°C. In a large baking tray add Jungle Oats Large Tiger Flakes, seeds, KOO Butter Beans, garlic, paprika, salt & pepper. Give it a good mix and sprinkle over parmesan cheese, place into the oven and bake for 45 minutes – 1 hour.
For the steak: Heat a griddle pan over medium to high heat, season steak with a generous amount of course black pepper on both sides, then sprinkle over salt. Drizzle over olive oil and rub into the steak. Place steak into the pan and sear for 2 – 3 minutes on each side, then remove from the pan and place onto a wooden board to rest.
For the BBQ sauce: In the same pan add onions and cook until translucent, then add in garlic and cook until fragrant. Add in Benny Beef Flavoured Stock, BBQ sauce and Black Cat Smooth Peanut Butter. Allow this to cook over medium to low heat until thickened, once the sauce reaches a thick consistency turn down the heat and stir in butter. Place steak into the pan and bast with the sauce.
Assembly: Slice steak and place onto your plate, then spoon a generous amount of salsa on the side and top salsa with savoury granola. Garnish with micro herbs and enjoy!
