Sweet Chimichangas

  • Serves: 8 chimichangas
Sweet Chimichangas

Ingredients:

Flavour 2

  • 1 can KOO Guava Halves, drained and finely chopped
  • 100 g white chocolate, roughly grated
  • ½ cup nougat, chopped small (any variant)

Flavour 1

  • 1 can KOO Unsweetened Pie Apple Slices, chopped small
  • 3 tbsp brown sugar
  • 1 ½ tsp ground cinnamon
  • Pinch ground cloves
  • ½ tsp vanilla
  • ¼ cup chopped maraschino cherries, drained
  • 8 - 10 soft tortillas
  • Flour paste
  • Cinnamon sugar for apples and toasted coconut for guavas
  • Oil for deep frying

Method:

  1. Preheat the oil to about 170°C. Be careful not to burn yourself.
  2. Prepare both fillings, by mixing the ingredients together.
  3. Layer the tortillas out and spread flour paste around the edges.
  4. Divide the fillings evenly between the tortillas. Spoon the filling in the lower third of each tortilla, fold the two sides of each tortilla towards the centre and then roll the tortilla up like a burrito. Ensure that all the ends are in and that the flour has properly sealed the tortilla shut.
  5. Have a plate ready with paper toweling on for draining, as well as a bowl of cinnamon sugar and a bowl of toasted coconut.
  6. Deep fry the chimichangas until golden brown and crispy, about 2 to 3 minutes, flip them while cooking to ensure even cooking.
  7. Transfer the chimichangas to the paper towel to drain for a minute and then roll them in either the cinnamon sugar(apple) or the toasted coconut(guava)
  8. Eat as is or with a good scoop of vanilla ice-cream or warm custard.
