- 2 cans KOO Whole Kernel Corn, drained
- 2 cups cherry tomatoes, halved
- 3 cups cooked quinoa, cooled
- ¼ cup chopped coriander
- ⅓ cup minced spring onions
- 2 tsp fresh lime juice
- 1 tbsp olive oil
- Salt & pepper
- ½ cup cucumber, chopped
