Sticky beef short ribs with rustic bean mash

Sticky beef short ribs with rustic bean mash

Ingredients:

Marinade

  • 1 tbsp KOO Tomato Paste
  • 45 ml honey
  • 60 ml soy sauce
  • ¾ tsp english mustard
  • 125 ml KOO Apricot Halves, drained and pureed
  • 25 ml oil
  • 60 ml sweet chilli sauce
  • Salt and pepper

Bean Mash

  • 350 g butternut, peeled and cubed
  • 250 g orange sweet potato, peeled and cubed
  • 750 ml chicken or veg stock
  • 1 can KOO Butter Beans, drained and rinsed
  • 1 can KOO Speckled Sugar Beans, drained and rinsed
  • 60 ml butter
  • 1 tbsp fresh coriander, roughly chopped
  • ½ fresh lemon, squeezed
  • 2 tsp basil, finely chopped
  • Salt and pepper
  • 1 kg beef short ribs, parboiled in salted water and drained, keep warm

Kitchen gadgets:

Aluminum foil, sharp knife, baking tray

Method:

  1. Preheat the oven to 190°C.
  2. Marinade: Mix all ingredients together and pour over warm short ribs. Mix well and leave to marinate for at least 30 minutes.
  3. Cooking the ribs: After marinating, put the ribs on a baking tray or a rack over a baking tray. Roast in the oven for at least 40 to 50 Minutes, brushing with the marinade and turning frequently(to prevent burning)
  4. Bean Mash: Put the butternut and Sweet Potato in a pot and cover with chicken stock. Bring to the boil and cook until soft. Drain excess liquid off.
  5. Add the butter, butterbeans, sugar beans, fresh coriander and fresh basil. Stir to combine and heat. Using a potato masher, roughly mash the beans and veg together. Should be rustic and not smooth. Adjust the seasoning with salt, lemon and lots of black pepper.
  6. Serve sticky ribs on top of mash and enjoy.
