Spicy Beef & Lentil Chowder

Spicy Beef & Lentil Chowder

Ingredients:

  • 1 can KOO Mixed Vegetables in Curry Sauce
  • 1 can KOO Lentils, drained
  • 1 sachet KOO Tomato Paste
  • ½ cup onions, finely chopped
  • 3 tbsp oil
  • 1 tsp garlic, crushed
  • 3 tbsp fresh coriander, roughly chopped
  • ¼ tsp cayenne pepper
  • 1 tsp chilli flakes
  • ½ tsp cumin, ground
  • Salt & pepper
  • 1 small banana, mashed
  • 300 g beef shin meat, diced (keep bones to add in for the extra flavour)
  • 1 tsp masala
  • ½ tsp brown mustard seeds
  • ½ tsp turmeric, ground
  • 1 L vegetable or beef stock
  • ½ tsp coriander, ground
  • ½ tsp ginger crushed fresh

Kitchen gadgets:

Deep saucepan, sharp knife, wooden spoon

Method:

  1. Heat oil in a deep saucepan or stockpot. Add the onion, ginger and garlic and saute lightly.
  2. Add all the spices and the beef shin meat and lightly saute to brown.
  3. Add the tomato paste and the stock. Bring to the boil and simmer covered for about 1 hour, meat should be very soft.
  4. Stir in the banana, curry vegetables, lentils and fresh coriander. Adjust seasoning with salt and pepper. Bring to the boil and simmer for 5 minutes.
  5. If you want the soup thinner, add more stock.
  6. Serve with a dollop of sour cream. Sliced banana and chutney, garnish with extra coriander. Sliced French Loaf or your favourite bread and butter.
