Spiced Bulghar Wheat and Vegetables

Spiced Bulghar Wheat and Vegetables

Ingredients:

Dressing

  • 1 tsp chilli, finely chopped
  • 1 tsp crushed garlic
  • 2 tbsp lemon juice
  • 2 tsp honey
  • 1 tsp mint, finely chopped
  • 1 tsp parsely, finely chopped
  • 1 tsp basil, shredded
  • 125 ml Bulgarian yoghurt
  • 3 cups baby spinach
  • 2 cups butternut, cubed
  • 2 red peppers, deseeded and roughly chopped
  • 1 cup red onion, cut into petals
  • 2 tsp chermoula spice
  • 4 tbsp olive oil
  • 150 g bulghar wheat
  • 650 ml hot vegetable stock
  • 1 can KOO Chickpeas, drained and rinsed
  • 1 can KOO Lentils, drained and rinsed
  • Lemon or lime wedges to serve

Kitchen gadgets:

Oven dish, sharp knife, fork

Method:

  1. Preheat the oven to 180°C. Mix the butternut, red peppers, red onion, chermoula and olive oil together. Layer in an oven dish in an even layer and season with salt, roast until butternut is soft yet firm. Drain the excess oil off.
  2. Pour hot vegetable stock over the wheat and cover for 20 to 30 minutes until liquid has been absorbed. Fluff up with a fork. Add the chickpeas and the lentils and mix together.
  3. Dressing: Mix all ingredients together and allow to infuse for 15 minutes before using over salad. Adjust seasoning with salt and pepper if needed.
  4. To serve: Spoon the bulghar wheat mixture onto a serving platter interleaved with the baby spinach. Top with the roasted vegetable and arrange creatively.
  5. Drizzle with dressing just before serving and garnish with lime/lemon wedges .
  6. Serve with toasted Pita Bread triangles.
