Roasted Tomato Peach Salsa

Roasted Tomato Peach Salsa

Ingredients:

  • 4 cups vine-ripened tomatoes, quartered
  • 1 small onion, quartered
  • 1 can KOO Peach Slices, drained
  • 4 garlic cloves, peeled
  • 2 jalapeño chilli peppers, sliced in half lengthwise (seeds and ribs removed for less heat)
  • 2 tbsp grapeseed oil or canola oil
  • 2 tsp salt
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ¼ cup coriander leaves, chopped
  • 1 tbsp fresh lime juice, more if needed

Kitchen gadgets:

Sharp knife, food processor

Method:

  1. Preheat grill to high and place rack close to the element.
  2. Toss the tomatoes, onion, peaches, garlic, 1 jalapeño pepper with grapeseed oil, on cookie sheet with a baking mat.
  3. Grill until the fruit & vegetables are charred, approximately 10-15 minutes.
  4. Transfer vegetable mixture to a food processor, fitted with a metal blade.
  5. Add cumin, smoked paprika and pulse until chunky. The second jalapeño can also be added if the mixture is not spicy enough.
  6. Add the coriander & lime juice and pulse again to mix in flavours.
  7. Taste and check seasoning.
  8. Serve or store in a sterilised glass container in the fridge.
