Protein Rich Cottage Pie

  • Serves: 4 people
Protein Rich Cottage Pie

Ingredients:

  • 2 tbsp oil
  • 1 onion, diced
  • 500 g braai wors / boerewors, cut into chunks (chipolatas could also be used)
  • 1 can KOO Baked Beans in Tomato & Herb Sauce
  • 1 can KOO Mixed Veg / Mixed Vegetables in Curry Sauce (optional)
  • Salt & pepper
  • 4 - 6 large potatoes, peeled
  • Knob of butter or margarine
  • Milk

Kitchen gadgets:

Deep frying pan, sharp knife, deep oven proof dish, masher

Method:

  1. In a frying pan, heat the oil and fry the onions. Set the onion aside.
  2. Fry the wors pieces to seal and colour, add the onion and the baked beans and mixed veg. Bring to the boil. Adjust seasoning with salt, pepper. Extra herbs can be added if you have(fresh basil or oreganum).
  3. Pour the bean mixture into a deep oven proof dish and even out.
  4. Mash topping: Boil the potatoes in salted water until soft, drain excess water and mash with butter, milk and salt & pepper until smooth and creamy.
  5. Spoon over the bean mixture to cover evenly.
  6. Bake in a preheated oven of 180°C for 20 Minutes or until potatoes are lightly golden.
