Pork & Potato Hash with Cucumber Relish

Pork & Potato Hash with Cucumber Relish

Ingredients:

  • 4 onions, peeled and finely diced
  • 200 g KOO Dill Cucumbers, drained and finely chopped
  • 3 - 4 tbsp olive oil
  • 1 - 2 tbsp light brown sugar
  • 2 tbsp light balsamic vinegar
  • 20 g clarified butter or ghee
  • 1 kg potatoes, peeled and diced
  • 500 g minced pork
  • 150 ml vegetable stock
  • 6 sprigs oreganum

Large frying pan, sharp knife

Method:

  1. Relish: Put half of the chopped onion in a pan with the oil and when hot add the cucumber and fry for a couple of minutes. Sprinkle in the sugar and let the mixture caramelize. Add the vinegar and 150 ml water from the jar of cucumbers. Bring to the boil then simmer gently for 15 minutes. Season with salt and pepper. Set aside and chill.
  2. Heat the butter in a large frying pan, add the potatoes and fry over a medium heat, stirring occasionally, for about 12 minutes until just tender. Take them out of the pan and keep them warm in the oven.
  3. Add the pork mince to the hot pan and fry over a high heat to brown it then add the rest of the chopped onion and cook for a few minutes. Put the potatoes back in the pan, season with salt and pepper and pour in the stock. Simmer, uncovered 10 minutes, stirring every so often. Add two thirds of the oreganum leaves and check the seasoning.
  4. Spoon the hash onto 4 hot plates, add some of the cucumber relish and garnish with the rest of the oreganum leaves.
