POMEGRANATE AND PEAR SALSA WITH CORIANDER

POMEGRANATE AND PEAR SALSA WITH CORIANDER

Ingredients:

  • 1 cup pomegranate seeds
  • 2 medium cloves garlic, finely minced
  • 3 tbsp lime juice
  • Zest of 1 medium lime
  • 2 tsp honey
  • 180g KOO Pear Halves, drained and lightly rinsed and diced into small chunks
  • ½ medium white onion, diced small
  • 4 medium spring onions, finely sliced
  • ½ cup finely chopped coriander
  • 1 medium jalapeño, deseeded and very finely chopped

Kitchen gadgets:

Sharp knife, Chopping board, Mixing bowl, Spoon, Serving bowl, Paper towelling

Method:

  1. Transfer pomegranate seeds to a bowl that has been lined with several thicknesses of paper towels.
  2. Cover with another layer of paper toweling and set aside. This will dry the pomegranate seeds so they don't "bleed" on your other salsa ingredients.
  3. Combine garlic, lime juice, lime zest and honey in a small bowl. Stir till well combined.
  4. In a medium bowl combine KOO Pear Halves, white onion, green onion and jalapeño - stir together well to combine.
  5. Add lime/honey mixture and coriander and gently stir.
  6. Add pomegranate seeds just before serving and stir to combine. Transfer to a serving dish and garnish with a extra coriander, if desired.
