KIDNEY BEANS & CAULIFLOWER BOBOTIE

KIDNEY BEANS & CAULIFLOWER BOBOTIE

Ingredients:

  • 410g KOO Kidney Beans, drained
  • 500g Tastic Parboiled Rice
  • 3g salt
  • 5 potatoes, peel and cube
  • 50ml vegetable oil
  • 450g onions, chopped
  • 40g garlic, minced
  • 30ml ginger, chopped
  • 15ml red chillies, deseeded and chopped
  • 80ml red curry paste
  • 3 cinnamon sticks
  • 10g cardamom pods
  • 300ml plain yoghurt
  • 1.5kg cauliflower florets
  • 80ml fresh coriander, chopped

Kitchen gadgets:

Casserole dish, frying pan, pot, fork, sharp knife

Method:

  1. Preheat the oven at 200°C.
  2. Place rice in a pot of salted water for 10 minutes. Drain. Boil the potatoes for 15- 20 minutes or until just tender. Drain.
  3. Heat oil in a pot, and sauté the onions, until browned and crisp then add in the garlic, ginger, chillies, curry paste, cinnamon sticks and cardamom pods. Cook for 5 minutes then add in the yoghurt, cauliflower and beans to the onion mixture and blend well. Adjust seasoning.
  4. Spoon the rice and cauliflower mixture into a casserole dish in alternating layers. Cover with foil and bake for 30-40 minutes or until vegetables are tender.
  5. Coat the potatoes with oil and cumin seeds, sauté in a frying pan until golden brown and crisp.
