Creamy Papino Chicken & Bean Casserole

Creamy Papino Chicken & Bean Casserole

Ingredients:

  • 3 tbsp butter or ghee
  • 2 tsp oil
  • 8 - 10 pieces chicken thighs, fat trimmed or any chicken pieces
  • 1 ½ onions, finely chopped
  • 1 tbsp garlic and ginger mix
  • 1 tsp red chilli, crushed
  • 1 tsp cajun spice
  • 1 tsp chicken spice
  • 1 tsp coarse pepper
  • 2 tsp lemon juice
  • 1 tsp masala
  • 1 tsp coriander, ground
  • 1 tsp cumin, ground
  • 1 papino, half ripe and grated
  • 150 ml chicken stock
  • ½ can KOO Chickpeas, drained and slightly mashed
  • ½ can KOO Red Kidney Beans, drained and rinsed
  • 200 ml fresh cream
  • 2 tbsp chutney
  • ½ cup fresh coriander, roughly chopped
  • Salt & pepper

Kitchen gadgets:

Heavy based pot, sharp knife, mixing spoon

Method:

  1. In a heavy based saucepan, heat the butter and oil together. Fry the chicken pieces to brown on each side and set aside.
  2. Add the onion, garlic and ginger mix, chilli and all the spices to the pan and lightly sautè until onions are softened. Add a little extra oil if need be.
  3. Add the lemon juice and chicken stock, as well as the papino and mix well. Add the chicken to the pot, season and bring to the boil.
  4. Reduce the heat and simmer with the lid on until chicken is cooked through. Add extra stock, if it's drying out to much.
  5. Add the chickpeas and the kidney beans and mix.
  6. Pour in the fresh cream, chutney and coriander and mix well. Simmer uncovered, until sauce thickens/reduces. Do not boil, or it will curdle.
  7. Serve with Basmati Rice, garnish with extra coriander and salad.
