Creamy Dill Cucumber Chicken with Bacon

Creamy Dill Cucumber Chicken with Bacon

Ingredients:

  • 1 tbsp oil
  • 140 g bacon, chopped
  • 2 garlic cloves, minced
  • 1 onion, finely chopped
  • 450 g chicken fillets, boneless and skinless, cut into bite size pieces
  • 1 ¼ cups chicken stock
  • 50 g cream cheese
  • ½ cup sour cream
  • ¼ cup finely grated parmesan cheese
  • ½ - 3/4 cup KOO Dill Cucumber, chopped, plus more to serve (drained)
  • Spring Onion, finely chopped, for garnish
  • Salt and Pepper to season

Kitchen gadgets:

Pan, sharp knife, spatula

Method:

  1. Heat oil in a pan over high heat. Add bacon and cook until crisp . Remove with a slotted spoon onto a paper towel lined plate.
  2. Reduce heat to medium high. Add onion and garlic, cook for 5 minutes or until golden and translucent.
  3. Add chicken and cook until light golden and just cooked through - about 6 minutes.
  4. Add chicken stock. Once simmered, add the cream cheese.
  5. Add parmesan cheese and sour cream and stir through. Cook sauce for 3 - 5 minutes or until thickened. Season with salt and pepper to taste.
  6. Stir through dill cucumber and bacon. Serve over mashed potato, sprinkled with spring onion and slices of dill pickle if desired.
