CORN AND OLIVE BREAD

  • Serves: 6 people
CORN AND OLIVE BREAD

Ingredients:

  • 4 cups of flour
  • 3 tbsp sugar
  • 10 g instant yeast
  • 40 g butter
  • A mixture of kalamata and green olives pips removed and roughly chopped
  • 1 can KOO Whole Kernel Corn, drained
  • 375 ml lukewarm water

Filling and crusty, it will satisfy on it's own or wide a hearty side.

Method:

  1. Put all your dry ingredients in a mixing bowl.
  2. Cut the butter up into chunks and, using your fingertips, rub it into the flour until it becomes crumbly.
  3. Drain the corn and roughly chop up the olives.
  4. Add to the flour and mix everything thoroughly, then gradually add the water, kneading the dough in between splashes of water. The dough must not be too hard and should have a smooth consistency. If it is a little hard, add a little more water.
  5. Lightly coat the dough with oil (to prevent it from forming a hard crust) then put it in a big glass bowl.
  6. Cover with a damp tea towel and leave to rise in a warm sunny spot for about 45 minutes.
  7. After time is up, sprinkle some flour on to a clean surface, remove the dough from the bowl, put it on the surface and knead it again.
  8. Grease a flat bottomed potjie, put the dough inside and let it rise for another 5 minutes. Bake the bread the same way you would bake pot bread.
  9. Let it bake for about 45 minutes then check to see if it's done by sticking a skewer into the centre of the bread.
  10. If the skewer comes out moist, put the bread back on to the coals and bake until cooked.
