CAULIFLOWER AND GREEN BEAN PIZZA

CAULIFLOWER AND GREEN BEAN PIZZA

Ingredients:

  • ½ large head of cauliflower
  • 2 tsp dried parsley
  • ¼ tsp garlic powder
  • A couple of pinches of fresh ground black pepper
  • ½ cup low fat cottage cheese
  • 2 tbsp olive oil
  • 1 pre-made pizza crust
  • ⅓ cup freshly grated pecorino cheese
  • Chilli flakes to taste
  • 1 can KOO Cross Cut Green Beans, drained

Kitchen gadgets:

Food processor, pot, wooden spoon, baking tray

Method:

  1. Preheat oven to 220°C degrees.
  2. Chop the cauliflower into florets and add to a covered saucepan. Add 3 tbsp water, cover and simmer (steam) until very tender (about 7 minutes).
  3. Drain the cauliflower and add to the container of a food processor.
  4. Add the parsley, garlic powder, black pepper, cottage cheese and 1 tbsp of the olive oil.
  5. Process on medium until very smooth (you will want to scrape the sides of the processor bowl).
  6. Spread the pureed cauliflower evenly over the pizza crust. Sprinkle the grated pecorino over the top.
  7. Top with the green beans and sprinkle chilli flakes to taste. Drizzle the remaining 1 tbsp olive oil, place on a baking tray and bake at 220°C degrees for about 12 minutes or until the crust is golden.
