Cauliflower & Chickpea Curry

Cauliflower & Chickpea Curry

Ingredients:

  • 1.1 kg cauliflower, cut into small florets
  • 2 tbsp vegetable oil
  • 20 g fresh ginger, peeled and finely grated
  • 1 tsp garam masala
  • ½ tsp ground turmeric
  • 2 tomatoes, finely chopped
  • 200 g plain yoghurt
  • 1 can KOO Chickpeas, rinsed and drained
  • 5 g fresh coriander sprigs
  • 2 clove garlic, peeled and crushed

Kitchen gadgets:

2 medium saucepans, sharp knife

Method:

  1. Cook the cauliflower in a medium saucepan of boiling water. Simmer for 10 minutes or until almost tender. Drain well.
  2. Meanwhile, heat the oil in another medium saucepan over a medium heat. Stir in the ginger, garlic and spices for 1 min or until fragrant. Add the tomato and simmer, uncovered for 5 minutes or until the tomato is softened.
  3. Stir the yoghurt, then the cauliflower and chickpeas into pan. Simmer with the lid on for 5 minutes or until the cauliflower is tender. Season to taste.
  4. Serve the curry sprinkled with coriander.
