Boundaryless Biltong Bean Salad

Ingredients:
- 1 butternut, peeled & chopped
- 1 can KOO Butter Beans in Brine, drained & rinsed
- 1 can KOO Lentils in Brine, drained & rinsed
- 250 g biltong
- 180 g pillow pack rocket, washed & dried
- 180 g butter lettuce, washed & dried
- 180 g loose lettuce, washed & dried
- 50 ml olive oil
- 250 ml dijon mustard
- 1 lemon
- 2 ml salt
- 2 ml black pepper
- 5 ml paprika
- 250 g feta cheese

- Season chopped butternut and bake for 20 minutes.
- Drain and rinse lentils and butter beans. Wash lettuce and rocket leaves, dry it thoroughly.
- Toss paprika with KOO Butter Beans. Squeeze lemon and use half the lemon juice.
- Whisk lemon juice, olive oil, Dijon mustard, salt and pepper well. Place lettuce and rocket at the bottom of the platter. Then layer the beans, feta cheese, lentils, biltong and butternut.
- Drizzle over salad dressing.
