APPLE-PEAR PIE WITH THICK PECAN CRUMBLE

APPLE-PEAR PIE WITH THICK PECAN CRUMBLE

Ingredients:

Filling

  • 1 ½ cups KOO Apple Sauce
  • 1 tsp ground cinnamon
  • 1 can KOO Pear Halves, chopped roughly with syrup
  • ½ can KOO Unsweetened Pie Apple Slices, chopped roughly
  • ¾ cup sugar
  • Pinch salt
  • 1 tsp orange or lemon rind
  • 2 tbsp Maizena mixed in a little water

Crust

  • 2 ½ cups cake flour
  • 2 ½ cups icing sugar
  • ½ tsp salt
  • 225 g butter, chilled
  • ½ cup ice water (and a little extra if needed)

Crumble

  • 1 ¼ cups Jungle Oats
  • 1 cup cake flour
  • ½ cup white sugar
  • ½ cup brown sugar or treacle sugar
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 ¼ cup pecans, toasted and roughly chopped
  • 150 g butter, melted
  • Whipped cream and icing sugar to serve

Method:

  1. Crust Base: Add cake flour, icing sugar and salt to a bowl, and rub the butter in with the tips of your fingers, to resemble light breadcrumbs. Add the ice water and mix to form a dough. Knead the dough together. Add a little extra water at a time, if required. Cover and refrigerate for 1 hour.
  2. Heat the oven to 200°C. Grease a large pie dish. Roll the dough out and line the dish. Line it with greaseproof paper and baking beads and blind bake for 15 minutes. Take the lining off and allow to cool.
  3. Filling: Combine all filling ingredients in a pot and bring to the boil. Stir all the time to prevent maizena lumping and so the sauce doesn't stick to the bottom. Cook for 5 minutes and then take it off the heat. Allow to cool for 10 minutes
  4. Crumble: Mix all ingredients together and mix well. It will form a crumbly mixture.
  5. Reduce heat of the oven to 180°C. Pour the cooled filling over the baked crust base. Top the filling with crumble to form a thick layer.
  6. Bake for 45 to 60 minutes, until the topping is golden brown. If the topping browns to quickly, cover with foil.
  7. Take the Pie out of the oven and allow to cool.
  8. Serve with Whipped Vanilla Flavoured Cream and a dusting of icing sugar.
