All in One Spicy Breakfast Tomatoes

All in One Spicy Breakfast Tomatoes

Ingredients:

  • 6-8 large tomatoes
  • ½ can KOO Chakalaka with Sweetcorn, oil drained and chopped
  • 1 can KOO Baked Beans in Tomato Sauce
  • 1 tsp fresh basil, finely chopped
  • 1 cup cooked bacon, finely diced
  • ½ cup milk
  • 3 eggs
  • ½ cup finely grated cheese
  • Rocket to serve
  • Toasted english muffin
  • Chopped basil to serve

Method:

  1. Preheat the oven to 180°C. Grease and line a baking tray. Cut a thin layer 'top' off of the tomatoes and hollow out. (Freeze the tomato pulp and use in stews or casseroles when needed).Mix the chakalaka, baked beans, bacon or sausage and fresh basil together.
  2. Adjust seasoning with salt and pepper. Fill each tomato ¾ full with chakalaka mixture. Place tomatoes on baking tray.
  3. Mix milk, eggs and cheese together and season lightly with salt and pepper. Pour over the chakalaka mixture to full the tomato.
  4. Bake in the oven for 20 to 25 minutes until egg custard has set.
  5. Serve on a bed of rocket on half an English muffin and garnish with extra fresh basil.
