500 g potatoes, peeled and diced (about 2 large potatoes)
1 L beef stock (prepared from cube/powder, or carton)
1 can chopped tomatoes
1 can KOO Baked Beans in Tomato Sauce
Salt and freshly ground black pepper, to taste
Sauté: In a large pot or saucepan over medium heat, add the cooking oil. Once hot, add the chopped onion and red pepper. Cook for 5-7 minutes until soft.
Add Spices: Stir in the crushed garlic, peri-peri spice, and paprika. Cook for 1 minute until fragrant, stirring constantly to prevent the spices from burning.
Add Potatoes: Add the diced potatoes to the pot and stir until they are well coated with the oil and spice mixture.
Add Liquids and Simmer: Pour in the beef stock and the canned chopped tomatoes. Bring the mixture to a strong simmer.
Cook: Reduce the heat to low-medium, cover the pot, and let it simmer for 25-30 minutes, or until the potatoes are completely tender and the sauce has thickened slightly.
Add Beans: Gently stir in the entire can of KOO Baked Beans (do not drain the sauce). Heat through for 1-2 minutes, then immediately remove the pot from the heat.
Serve: Season to taste with salt and pepper. Serve hot with your preferred starch, such as pap, rice, or bread.
