Spiced Pumpkin, Lentil & Coconut Soup

Spiced Pumpkin, Lentil & Coconut Soup

Ingredients:

  • 10 ml red chilli
  • 1 tbsp KOO Tomato Paste
  • 2 stems lemongrass
  • 10 ml coriander, ground
  • 25 ml fresh ginger, chopped
  • 1.3 l vegetable stock liquid (chicken can be used for extra flavour)
  • 30 ml oil
  • 30 g butter
  • 200 g onion, chopped
  • 1.7 kg pumpkin, peeled and diced
  • 600 ml coconut cream/milk
  • 90 ml fresh coriander, roughly chopped
  • 15 ml palm sugar or treacle brown sugar
  • 1 to 2 cans KOO Lentils, drained
  • Extra coriander leaf for garnish
  • Black pepper, salt for seasoning

Kitchen gadgets:

Heavy pot, chopping knife, wooden spoon

Method:

  1. Put the chilli, lemongrass,tomato paste, ground coriander, fresh ginger and 2 tablespoons stock into food processor and blend until smooth.
  2. Heat the oil in a large saucepan,add the onion and sautè until soft. Add the spice paste, and cook for a few minutes to bring out the flavours.
  3. Add the pumpkin and remaining vegetable stock. Bring to the boil, then reduce the heat and simmer for 15 20 minutes until pumpkin is soft. Cool slightly.
  4. Blend in a food processor until smooth, return to a clean pot, stir in the lentil, fresh coriander, palm sugar and the coconut cream and simmer until hot.
  5. Adjust the seasoning and serve garnished with coriander leaf.
