Raisin Bread & Cucumber Sarmie

Raisin Bread & Cucumber Sarmie

Ingredients:

Bean Filling

  • 2 tsp butter
  • 1 tsp garlic, crushed
  • 1 can KOO Butterbeans in Tangy Sauce
  • 1 can KOO Cross Cut Green Beans, rinsed and drained
  • 1 can KOO Whole Kernel Corn, drained
  • Salt & pepper
  • 8 large slices raisin bread, buttered on both sides
  • 8 slices peppered beef or peppered ham
  • 8 long slices KOO Dill Cucumbers, drained
  • 2 (approx.) cups fresh rocket or frilly lettuce
  • 8 slices red and firm tomatoes
  • 4 slices mozzarella or ementhaller cheese (optional), cut in half

Kitchen gadgets:

Sharp knife, chopping board

Method:

  1. Lightly toast raisin bread on one side on a griddle pan to get the griddle lines. Set aside with untoasted side facing up.
  2. In a frying pan heat the butter and the garlic, add the butterbeans and green beans and bring to the boil. Mix well, simmer for 2 minutes before roughly mashing together. Fold in the Koo Corn Kernels and season with salt and pepper. Set aside to cool before layering the sandwich.
  3. Koo Whole Cucumbers: Slice thinly from top to end, they should be long slices.
  4. To layer the sandwich: on the bottom of 4 slices of bread, layer in the following order: Cheese, tomato slices, sliced cucumbers, beef or ham, rocket or lettuce, bean & corn mixture.
  5. Top with the left over raisin bread and serve on a bread board. Cut in half if it is too big.
