PEACH & APRICOT CHEESECAKE TURNOVERS

PEACH & APRICOT CHEESECAKE TURNOVERS

Ingredients:

  • 1 can KOO Peach Slices, drained and chopped in small pieces
  • 1 can KOO Apricot Halves, drained and chopped
  • 250 g plain & smooth cream or cottage cheese
  • 5 tbsp strawberry or raspberry jam
  • 1 tsp vanilla
  • ½ tsp lemon juice
  • ⅓ large puff pastry sheet squares
  • 2 tsp white granular sugar
  • Egg wash (milk and egg mix)
  • Icing sugar for dusting

Kitchen gadgets:

Greaseproof paper, fork, baking tray

Method:

  1. Preheat the oven to 190°C. Line baking sheets with greaseproof paper and spray with Spray and Cook.
  2. Combine cream cheese, jam, vanilla and lemon juice in a bowl and mix together, fold in the peaches and apricot. Mix to combine. Allow to stand for 10 minutes.
  3. On a floured working surface, cut each puff pastry square into 4 smaller squares.
  4. Egg wash all around the edges of the squares. Top one half of each square with mixture (1 to 2 tablespoons). Fold the pastry over(corner to corner) over the filling to form a triangle, pressing out excess air. Use or fingers or a fork to press and seal the pastry together. Carry on filling pastry squares until mixture is used up.
  5. Arrange the triangles on the baking sheets and egg wash the tops. Sprinkle with white sugar. Make 3 little slits on the top of each pastry.
  6. Bake turnovers until golden, about 15 minutes.
  7. Serve warm dusted with icing sugar.
