Liver, Onion & Veg Casserole

Liver, Onion & Veg Casserole

Ingredients:

  • 2 large onions, sliced
  • Knob of butter
  • Oil, for frying
  • 2 tsp garlic, crushed
  • 2 bay leaves
  • Seasoned flour (chicken spice, salt and pepper)
  • 1 tsp dried thyme or rosemary
  • 2 tbsp balsamic vinegar
  • 400 - 600 g thinly sliced liver (chicken, ox or lamb)
  • 2 tbsp KOO Tomato paste
  • 1 can KOO Mixed Vegetables, drained
  • 2 tsp parsley, chopped (dried or fresh)
  • 650 ml hot stock (beef, chicken or lamb stock)
  • ¼ cup Worcestershire sauce
  • 3 tbsp sour cream (optional)
  • 2 tbsp brown sugar

Kitchen gadgets:

Large pan, wooden spoon, casserole dish, sharp knife

Method:

  1. Toss the liver in the seasoned flour and fry in a hot pan that has a little oil in. Only cook enough to seal the liver on each side. Drain and Arrange evenly in a casserole oven dish.
  2. Heat the oven to 180°C
  3. Add a knob of butter and a little more oil to the same pan. Add the onions, garlic, bay leaf and herbs and lightly sautee. Add a tsp of the left over seasoned flour and mix.
  4. Add the balsamic vinegar, tomato paste, Worcestershire sauce, brown sugar and hot stock and stir. Bring to the boil and then simmer for 5 minutes until lightly thickened. Adjust seasoning with salt and pepper.
  5. Stir in the sour cream, mixed veg and parsley.
  6. Pour over the liver. Put the casserole into the oven and cook for 15 minutes.
  7. Serve with creamy mashed potato, rice or pap.
