KOO MINTED PEA TARTLETS

KOO MINTED PEA TARTLETS

Ingredients:

Filling

  • 20 g butter or margarine
  • 2 red peppers, finely chopped
  • 1 onion, sliced
  • 1 can KOO Fresh Garden Peas , drained
  • 60 ml milk
  • 60 ml cream
  • 2 eggs
  • Salt and freshly ground black pepper to taste
  • 10ml fresh mint

Crust

  • 1 roll of readymade puff pastry, defrosted
  • 60 ml Golden Cloud cake flour for dusting
  • 250 ml Tastic parboiled rice

Kitchen gadgets:

Muffin tin, Mixing bowl, Ladle, Rolling pin

Method:

  1. Preheat the oven to 1757degC. Grease a muffin tray with butter and dust with a little flour.
  2. Flour the surface and roll out the puff pastry until 2 mm thick.
  3. Cut out squares of 10 cm x 10 cm in size. Place each square into a muffin holder and work out any air bubbles.
  4. Fill each tartlet shell with baking paper and raw Tastic parboiled rice. Bake blind for 15 minutes. Remove the baking paper and the rice and bake for a further 5 minutes.
  5. Turn the oven down to 165°C.
  6. For the filling: melt 20 g of butter in a small, heavy-based saucepan. Fry the sliced onions until light golden brown. Add the finely chopped red pepper to the onion and cook until soft.
  7. Season with salt and pepper to taste. Allow to cool.
  8. Fold the garden peas through the onion and red pepper mixture.
  9. Add the fresh mint.
  10. Beat together the milk, cream and eggs.
  11. Spoon the onion, red pepper and garden peas mixture into each tartlet case. Top with the milk and egg mixture.
  12. Bake for 20 minutes, or until set.
