Lamb & Bean Potjie Kos

Lamb & Bean Potjie Kos

Ingredients:

  • 4 whole lamb shanks or 1.2 kg Lamb Stewing Meat
  • 20 ml sunflower oil
  • 2 leeks, sliced
  • 1 can All Gold Mediterranean Style Diced Tomatoes
  • 50 g sachet All Gold Tomato Paste
  • 35 g sachet concentrated lamb wet stock
  • 250 ml water
  • 5 ml salt
  • Freshly ground black pepper, to taste
  • 50 ml balsamic vinegar
  • 15 ml brown sugar
  • 5 ml dried or 15 ml fresh rosemary
  • 500 g sweet potatoes, unpeeled and thickly sliced
  • 1 can KOO Butterbeans in Brine, drained
  • 1 can KOO Red Kidney Beans, drained
  • 30 ml cake flour
  • 30 ml cold water

Method:

  1. Heat the sunflower oil in a heavy based saucepan. Brown meat on all sides.
  2. Add the leeks, diced tomatoes, tomato paste, concentrated lamb wet stock and water. Season with salt and freshly ground black pepper. Add the balsamic vinegar, sugar and rosemary. Simmer covered for 2 to 2.5 hours over medium heat until the meat is tender.
  3. Add the sweet potato and simmer for 20 - 25 minutes or until the sweet potatoes are just tender. Add the beans and allow to warm through. Transfer meat, sweet potato and beans to a warmed serving dish and keep warm.
  4. Make a paste of cake flour and water and add to cooking liquid. Bring to the boil and stir over medium heat until gravy has thickened. Pour over meat and sweet potato and serve.
