KOO BAKED BEANS, CHICKEN AND GARLIC TOAST

KOO BAKED BEANS, CHICKEN AND GARLIC TOAST

Ingredients:

  • 1 can KOO Baked Beans in Tomato & Herb Sauce
  • 1 x 35g sachet concentrated chicken wet stock
  • 50 g Butter, melted
  • 5 ml Crushed Garlic
  • 10 g fresh Flat Leaf Parsley to garnish
  • 4 x Chicken Breasts, deboned and skinned
  • 1 loaf of French Bread, cut into 1 cm slices
  • Salt and Freshly Ground Black Pepper to taste
  • Fresh Herbs to garnish
  • 10 ml Butter

Kitchen gadgets:

Bread knife, Large saucepan, 2 x forks, Pastry brush, Baking tray

Method:

  1. Half-fill a medium-sized, heavy-based saucepan with cold water. Add the concentrated wet stock and stir. Place the chicken breasts in whole.
  2. On a low heat, poach the chicken in the wet stock for 10 - 15 minutes; the whole fillet should be white and tender. Cut open the fillet to check if the chicken is cooked through.
  3. Once the fillets are cooked, remove from the stock and allow to cool, then shred, using two forks. Set aside.
  4. Preheat oven to 200°C.
  5. Melt the 50 g butter and garlic together.
  6. Brush the garlic butter onto the bread slices, place on a baking tray and bake until the bread turns golden in colour. Remove and set aside.
  7. In a heavy-based frying pan, add the 10 g butter and heat the baked beans through, adding the chicken and flat leaf parsley. Stir through once.
  8. Spoon the baked bean and chicken topping onto the slices of garlic toast and serve on a platter.
  9. Garnish with fresh herbs.
