HEARTY VEGETABLE SOUP WITH KOO CORN VETKOEK

HEARTY VEGETABLE SOUP WITH KOO CORN VETKOEK

Ingredients:

Soup

  • 10 ml sunflower oil
  • 1 clove garlic, crushed
  • 1 large onion, chopped
  • 4 celery sticks, chopped
  • 5 ml ground cinnamon
  • 5 ml dried parsley
  • 2 x 410 g KOO Miced Vegetables Curry Flavour
  • 1 x 410 g KOO Chakalaka with Butternut
  • 1 x 410 g KOO Baked Beans in Tomato & Herb Sauce
  • 2 x 35 g sachets concentrated chicken wet stock
  • 1.5 Litres boiling water
  • 1 x 50 g sachet All Gold Tomato Paste
  • 30 ml sugar
  • Salt and freshly ground black pepper to taste
  • Extra oil for frying

Corn vetkoek

  • 280 g self-raising flour
  • 5 ml baking powder
  • 5 ml salt
  • Freshly ground black pepper
  • 1 ml chilli powder
  • 1 x 415 g can KOO Whole Kernel Corn, drained
  • 2 eggs
  • 200 ml water
  • 25 ml oil

Kitchen gadgets:

Sauce pan, Pot, Deep fryer or pot with oil

Method:

  1. Heat the butter in a large heavy-based saucepan. Add the garlic and sauté; for 2 minutes. Add the onion, celery, cinnamon and dried parsley; cook for 5 minutes.
  2. Add the mixed vegetables, the chakalaka, the baked beans, the concentrated chicken wet stock, tomato paste and sugar. Season to taste and bring to the boil. Lower the heat and simmer covered for 30 - 40 minutes. Season to taste.
  3. Meanwhile, for corn vetkoek: Sift dry ingredients together. Add drained corn and mix through lightly. Beat eggs, water and oil together and to dry ingredients. Mix ingredients until a stiff batter forms. Fry spoonful's of batter in heated cooking oil for 4 - 5 minutes, turning vetkoek over halfway. Drain on kitchen paper.
  4. Serve vetkoek warm with hearty vegetable soup.
