Fruit Ice Cream Bombe

Fruit Ice Cream Bombe

Ingredients:

  • 50 ml Grand Marnier or Cointreau 
  • 200 g strawberries, pureed
  • 1 tub cream cheese, smooth and plain
  • 1 tin condensed milk
  • 4 cups whipped cream
  • 160 g pineapple, crushed and drained
  • 1 can KOO Lite Fruit Cocktail, drained
  • ½ can KOO Apricot Halves, drained and chopped
  • 100 g nougat, roughly chopped
  • 40 g flaked almonds, toasted
  • Edible flowers for garnish

Kitchen gadgets:

Round bottomed pudding bowl, plastic wrap, large bowl

Method:

  1. Lightly grease a 2 L round bottomed pudding bowl. Line it with plastic wrap, allowing it to hang over the sides. Place the bowl into the freezer until ready to use.
  2. In a large bowl mix the liqueur, pureed strawberries, cream cheese and condensed milk together.
  3. Fold in the whipped cream before adding in the fruit, nougat and almonds.
  4. Pour the mixture into the frozen pudding bowl and cover with plastic wrap. Freeze until firm, preferably overnight.
  5. To serve: Remove the plastic wrap from the base and invert onto a serving platter. Remove the rest of the plastic wrap and serve it sliced with extra KOO fruit and edible flowers for garnish.
