FRAGRANT CHICKEN AND KOO BEAN CASSEROLE

FRAGRANT CHICKEN AND KOO BEAN CASSEROLE

Ingredients:

  • 30 ml butter
  • 5ml oil
  • 8 mixed chicken portions, defrosted
  • 30ml butter
  • 2 onions, chopped
  • 2 cloves garlic, crushed
  • 4 celery sticks, roughly chopped
  • ½ yellow pepper, seeded and strips
  • ½ red pepper, seeded and cut into strips
  • 5 ml ground cumin
  • 5 ml paprika
  • 3 bay leaves
  • 1x35 g sachet concentrated chicken wet stock
  • 125 ml boiling water
  • 125 ml ginger ale
  • 5 ml salt
  • Freshly ground black pepper to taste
  • 1 x 410 g can KOO Red Kidney Beans , drained
  • 1 x 410 g can KOO Chickpeas , drained
  • Salt and freshly ground black pepper to taste

Heavy bottomed sauced pan

Method:

  1. Pre-heat the oven to 180°C.
  2. Heat the butter and oil in a heavy based sauce pan. Add the chicken and fry on both sides until golden in colour. Remove from the heat and set aside.
  3. Add the onions, garlic and celery to the butter and fry until the onion is soft. Add peppers, cumin, paprika and bay leaves and fry for a further 2 minutes. Add concentrated chicken wet stock, water and ginger ale. Add seasoning. Bring to the boil, reduce heat, cover with lid and simmer for 20 minutes or until chicken is cooked through.
  4. Add the beans and the chickpeas and simmer for a further 5 minutes.
  5. Serve chicken on seasoned couscous or rice.
