Firm Peach Tart

Firm Peach Tart

Ingredients:

Peach Layer

  • 250 ml fruit juice
  • 250 ml KOO Lite Peach Slices
  • 10 ml gelatin

Filling

  • 380 g condensed milk
  • 125 ml lemon juice
  • 250 g cream cheese
  • 250 ml fruit juice
  • 20 ml gelatin

Crust

  • 200 g coconut biscuits
  • 90 ml margarine, melted

Kitchen gadgets:

20 cm round loose-bottomed tart tin, large bowl, medium bowl

Method:

  1. For the crust: Finely chop the biscuits and add it to a mixing bowl. Stir through the melted butter until well combined. Press the mixture into a 20 cm round loose-bottomed tart tin.
  2. For the filling: In a large bowl, mix together the condensed milk, lemon juice and cream cheese. In a separate bowl, sprinkle the gelatin over 60 ml fruit juice and allow to bloom. Heat the remaining fruit juice in the microwave until warm (not boiling). Then add the bloomed gelatin into the warm fruit juice and allow to dissolve. Combine the gelatin and fruit juice mixture with the filling and mix until smooth. Pour the filling into the tart tin and refrigerate until firm.
  3. For the peach layer: Bloom gelatin in 45 ml fruit juice. Heat the remaining fruit juice, add the bloomed gelatin and mix until combined. Set aside to cool. Arrange the peach slices on top of the cooled tart and pour over the fruit juice mixture.
  4. Refrigerate until the peach layer has set.
