Cowboy's Breakfast Casserole

Cowboy's Breakfast Casserole

Ingredients:

  • 1 can KOO Baked Beans in Tomato Sauce
  • 50g softened butter
  • 2 cups milk or 500ml sour cream or plain yogurt
  • 6 large eggs
  • 12 slices bread
  • 2 cups Cheddar cheese
  • 450g ham, chopped or 450g sausage (any breakfast meat would work)
  • 1 tsp ground mustard
  • Salt and pepper

Kitchen gadgets:

Sharp knife, Deep casserole dish, Wooden spoon, Butter knife

Method:

  1. Line a deep, greased casserole dish with 8 slices of bread and top with half of the cheese.
  2. Sprinkle meat over cheese. You could also use any other type of meat you prefer.
  3. Mix eggs, baked beans with sauce, milk or sour cream or yogurt, ground mustard, and salt and pepper in a bowl until well blended and pour over cheese.
  4. Top with the rest of the cheese and 8 more slices of bread, pressing down so the egg bubbles up and moistens it a little.
  5. Spread with a little butter covering the whole surface of the bread.
  6. Cover and refrigerate overnight. Bake at 180°C for 45 minutes to 1 hour or until the middle of casserole looks cooked. Knife inserted in middle will come out with melted cheese but not with wet-egg when done.
