Boerewors and KOO Lentil Hot Pot

Boerewors and KOO Lentil Hot Pot

Ingredients:

  • 50 ml Oil
  • 10 x 150 g Boerewors sausages
  • 150 g onion, diced
  • 200 g carrot, diced
  • 10 ml crushed garlic
  • 10 ml fresh rosemary, crushed
  • 1.4 kg All Gold Pasta Sauce Tomato & Herb variant
  • 2.5 ml nutmeg, ground
  • 2 bay leaves
  • 5 ml fresh chilli
  • 4 tbsp Mrs. Balls Chutney
  • 3 tbsp Balsamic vinegar
  • 400 ml beef stock liquid
  • 425 g KOO Lentils, drained
  • Salt and Pepper to season

Kitchen gadgets:

Saucepan, Casserole Dish, Sharp knive

Method:

  1. Heat the oil in a saucepan and cook the sausages for 5 minutes, browning each side.
  2. Remove the sausages and put into a deep oven casserole dish. Sprinkle the drained lentils over the sausages.
  3. Using the same sauce-pan, reduce the heat to low, add the onion, carrots and garlic to the pan and cook until the onion is soft, but not browned.
  4. Stir in the rosemary, then add the pasta sauce.
  5. Add nutmeg, bay leaf, chilli, chutney, balsamic vinegar and beef stock. Bring to the boil. Simmer for 5 minutes, adjust seasoning.
  6. Pour the tomato sauce over the sausage and lentils.
  7. Bake covered in the oven for 10 minutes on 180'C and then remove lid/foil and cook for another 10 minutes.
  8. Garnish with fresh Rosemary.
