Baked Tomato & Mince Pasta

Baked Tomato & Mince Pasta

Ingredients:

  • 1 packet macaroni
  • 2 tbsp olive oil
  • 2 kg beef mince
  • 1 red pepper, chopped
  • 2 tomatoes, chopped
  • 2 onions, chopped
  • 2 tbsp rosemary, finely chopped
  • 1 tsp garlic, finely chopped
  • 2 tbsp barbeque spice
  • 1 L milk
  • 2 tbsp butter
  • 1 cup grated cheddar cheese
  • Fresh parsley
  • 2 sachets KOO Tomato Paste
  • 1 can KOO Mild and Spicy Chakalaka
  • ¼ cup sugar
  • Salt and pepper

Kitchen gadgets:

Pot, saucepan, oven dish

Method:

  1. Preheat the oven to 180°C.
  2. Cook the macaroni as instructed on the packaging.
  3. Heat olive oil in a pot and sauté; the onion, rosemary and red pepper until soft.
  4. Add in the mince and barbeque spice and cook for another 5 minutes. Add some water if necessary.
  5. Now add in the tomato paste and sugar and cook for another 8 minutes.
  6. Once cooked through, add the chakalaka and allow to simmer for 5 - 10 minutes.
  7. Make the white sauce by melting butter in a separate pot.
  8. Add in the flour and stir until combined. Pour in the milk slowly, while whisking and cook over a low heat until thick.
  9. Combine the white sauce with the macaroni and spoon half of it into an oven dish.
  10. Spoon over the tomato mince and then pour over the remaining white sauce and macaroni.
  11. Sprinkle over the cheese and chopped parsley. Bake for 20 - 30 minutes until golden brown in colour.
  12. Serve with another sprinkling of parsley and a fresh salad.
